Mix flour, 2 Tbs. sugar and salt in a food processor. Add 8 Tbs. frozen butter and pulse 4 times, 1 long second each time. Drop shortening and cream cheese into flour mixture; pulse another 4 or 5 times, 1 long second each, until fats are the size of peas and fine gravel.&lt;br /&gt; 2. Dump mixture into a medium bowl; rub through clean fingertips to blend. Stir in water with a rubber spatula until dough clumps form. Press dough with your palm to form a ball, then divide in half. Wrap each half in plastic wrap, pressing to form thick disks.&lt;br /&gt;Refrigerate at least 1 hour.&lt;br /&gt; 3. Adjust oven rack to lowest position and place a pizza stone or four 9-inch quarry tiles (from a hardware store) on rack to form an 18-inch square. Preheat to 400 degrees.&lt;br /&gt; 4. In a large saucepan, cook 1 cup cherry juice, 1 cup sugar, potato starch and a pinch of salt over medium-low heat; stir with a rubber spatula until a very thick paste forms. Scrape paste into&lt;br /&gt;cherries in a bowl. Add almond extract; stir to combine.&lt;br /&gt; 5. Set a dough disk on a floured work surface. Roll into a 14-inch circle. Fold in half and quickly lift into a 9-inch Pyrex pie plate (not deep-dish). Unfold. Fit dough into pie plate so it is not stretched in any way. Refrigerate.&lt;br /&gt; 6. Roll remaining dough disk into a 12-inch circle. Remove pie shell from refrigerator, add fruit filling, and dot with 1 Tb.  butter. Fold dough circle in half; quickly lift onto filling and unfold. Trim all around to 1/2-inch beyond lip of pie plate. Roll overhanging dough under with fingertips; flute.&lt;br /&gt; 7. Set an 18-inch square of heavy-duty foil on tiles or pizza stone. Set pie on foil and bake until crust just starts to color, about 20 minutes. Remove from oven, brush with egg white, and&lt;br /&gt;sprinkle with 1 1/2 Tbs. sugar. For Filling: Drain cherries in large strainer over bowl, reserving 1 cup liquid. Combine 3/4 cup sugar, cornstarch and salt in medium saucepan. Stir in reserved 1 cup cherry liquid. Cook and stir on medium heat 3-4 minutes or until mixture thickens. Remove from heat.&lt;br /&gt;Stir in cherries, remaining 3/4 cup sugar, butter, almond extract and food color. (8 oz. each) cream cheese, softened&lt;/li&gt;&lt;li&gt;2 c. sifted powdered sugar&lt;/li&gt;&lt;li&gt;1 tbsp. grated lemon rind&lt;/li&gt;&lt;li&gt;1 tsp. fresh lemon juice&lt;/li&gt;&lt;li&gt;1 tbsp. freshly squeezed lemon juice&lt;/li&gt;&lt;li&gt;1 frozen poundcake (10 3/4 oz.) thawed&lt;/li&gt;&lt;li&gt;1 can (21 oz.) cherry pie filling&lt;/li&gt;&lt;/ul&gt;INSTRUCTIONS&lt;br /&gt;Place softened cream cheese in container of electric food processor, and powdered sugar, lemon rind, and juice. Cover and process on high speed until well blended and smooth, stopping motor and scraping down side of bowl once or twice with rubber spatula. If mixture seems too thick, add a little more lemon juice. Combine with melted butter. Press into 9x13-inch pan. Refrigerate until hard for easier handling.&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;CREAMY MIDDLE:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;16 oz. cream cheese, softened&lt;/li&gt;&lt;li&gt;1/2 lb. Ricotta cheese&lt;/li&gt;&lt;li&gt;1 c. whipped cream or whipped topping&lt;/li&gt;&lt;li&gt;1 c. powdered sugar&lt;/li&gt;&lt;li&gt;2 tsp. almond extract&lt;/li&gt;&lt;li&gt;6 oz. chocolate chips, ground fine&lt;/li&gt;&lt;/ul&gt;INSTRUCTIONS&lt;br /&gt;Beat all ingredients together in electric mixer until smooth. Pillsbury all ready pie crusts&lt;/li&gt;&lt;/ul&gt;FILLING:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 c. fresh or frozen cranberries&lt;/li&gt;&lt;li&gt;3/4 c. sugar&lt;/li&gt;&lt;li&gt;2 tbsp. cornstarch&lt;/li&gt;&lt;li&gt;1 (21 oz.) can cherry fruit pie filling&lt;/li&gt;&lt;/ul&gt;INSTRUCTIONS&lt;br /&gt;Prepare pie crust according to package directions for two crust pie using 9 inch pie pan. Heat oven to 425 degrees F.In large bowl, combine cranberries, sugar and cornstarch; mix well. Stir in cherry pie filling; mix lightly. Spoon into pie crust lined pan.To make top crust, cut out 2 bells with cookie cutter, tops toward center. Place crust over filling and fold edge of top crust under bottom crust. Flute edge.
