Twin Peaks Cherry Pie
A nice fresh cherry pie recipe to try !
INGREDIENTS
  • fresh sour cherries
  • 1 cup sugar
  • 3 tbs cornstarch
  • 1/8 tsp cinnamon
  • salt
  • 1 tbs lemon juice
  • 1/4 tsp vanilla extract
  • 15 oz pie crust
INSTRUCTIONS
Drain two 16-oz cans pitted fresh sour cherries, reserving 1/2 cup juice.
Combine 1 cup sugar, 3 Tbsp cornstarch, 1/8 tsp cinnamon, and a pinch salt in medium saucepan.
Stir in reserved cherry juice and 1 Tbsp lemon juice. Bring to boil over medium heat, stirring constantly; boil 1 minute.
Remove from heat; stir in cherries and 1/4 tsp vanilla extract. Cool completely. Preheat oven to 425.
Prepare your favorite pastry for a double-crust pie or use 1 pkg (15 oz) refrigerated pie crusts. Roll half the pastry on lightly floured surface into a 12-inch circle; line 9-inch pie plate with pastry. Spoon in filling.
Roll remaining pastry into an 11-inch circle; cut vents with small, sharp knife. Place pastry over filling; trim edges,leafing a 1- inch overhang. Pinch edges together. Fold overhang up over edge and flute.
Bake 15 minutes. Reduce heat to 375; bake 30 minutes more, until crust is golden and filling is bubbly.
Cool on wire rack. Serve the fresh cherry pie recipe warm or at room temperature. Enjoy it !

Ingredients

* 1 recipe pastry for a 9 inch double crust pie
* 4 tablespoons quick-cooking tapioca
* 1/8 teaspoon salt
* 1 cup white sugar
* 4 cups pitted cherries
* 1/4 teaspoon almond extract
* 1/2 teaspoon vanilla extract
* 1 1/2 tablespoons butter

INSTRUCTIONS

1. Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in piepan. Set top crust aside, covered.
2. In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil lined cookie sheet --- in case of drips!
3. Bake for 50 minutes in the preheated oven, until golden brown. The fresh cherry pie recipe is ready...enjoy the pie ! Nice !

Ingredients:
  • 1c Sugar
  • 3tb Cornstarch
  • 1/4ts Salt
  • 2/3c Grenadine syrup
  • 2pk Frozen cherries (16-oz)
  • thawed
  • 1/2ts Almond extract
  • 2tb Butter or margarine
  • Double crust pastry
  • For double crust 9 inch
  • 2ts Milk
  • Substitute:
  • 2lb Fresh cherries - pitted
  • 1/4c Cornstarch

INSTRUCTIONS
Combine sugar, cornstarch, and salt in a medium saucepan; stir mixture to remove lumps. Stir grenadine syrup into sugar mixture. Cook over medium heat until smooth, stirring constantly. Add cherries; simmer until liquid
is thickened and transparent (about 4 minutes), stirring gently once or twice. Add almond extract and butter, stirring until butter melts; cool. Roll out half of pastry to 1/8-inch thickness on a lightly floured surface. Place in a 9-inch deep-dish pie plate; trim off excess pastry along edges. Pour cooled cherry mixture into pastry shell. Roll remaining pastry to 1/8-inch thickness; transfer to top of pie. Trim off excess pastry along edges. Fold edges under and flute. Cut slits in top crust for steam to escape. Brush top of pastry shell lightly with milk. Bake at 400 degrees for 55 minutes or until golden brown. Cool pie before serving. The cherry pie recipe is ready to serve....nice one ! Enjoy it !
NOTE: Two pounds fresh cherries, pitted, may be substituted for
2 (16-ounce) packages frozen cherries; use 1/4 cup cornstarch instead of 3 tablespoons.

Cherry Cheesecake Pie
Recipe

Ingredients:

* 2 eggs
* 1/2 cup sugar
* 2 teaspoons vanilla extract
* 1 1/2 cups sour cream
* 2 packages (8 ounces each) cream cheese, softened and cut in pieces
* 2 tablespoons melted butter
* graham cracker crumb crust
* 1 can (21 ounces) cherry pie filling

Graham Cracker Crust:
* 1 cup graham cracker crumbs, about 15 graham crackers
* 1/2 cup sugar

INSTRUCTIONS:
Combine Graham Cracker Crumb Crust ingredients. Press into a 9-inchpie pan. Bake at 400° for 6 minutes. Cool before filling.
Prepare cheesecake pie filling. Beat together eggs, sugar, vanilla,and sour cream. Gradually add cream cheese, beating well. Beat in melted butter. Pour cheese mixture into 9-inch prepared and baked graham cracker crust. Bake cherry cheesecake pie at 325° for 35 minutes, or until set in center. Will firm up as it cools. Top with cherry pie filling; chill cherry cheesecake pie thoroughly before serving. The cherry pie recipe is ready to serve...great taste !

* 2 (9 inch) unbaked pie crusts
* 1 (16 ounce) can pitted sour red pie cherries
* 1 cup water
* 1 cup white sugar
* 1/4 cup butter

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium bowl mix together cherries, water, and sugar. Pour mixture into pastry-lined deep dish pie pan. Dot with butter or margarine. Cover with top pastry. Seal edges and cut steam vents in top.
3. Bake in preheated oven for 40 minutes, until crust is golden brown. The fresh cherry pie recipe is ready....nice !

INGREDIENTS

* 1 (15 ounce) package double crust ready-to-use pie crust
* 3 (15 ounce) cans pitted sour cherries, drained
* 3 tablespoons quick-cooking tapioca
* 1 1/2 cups white sugar
* 1/4 teaspoon almond extract

INSTRUCTIONS

1. Preheat oven to 400 degrees F (200 degrees C).
2. Press one of the pie crusts into a 9 inch pie plate. Stir together the cherries, tapioca, sugar, and almond extract in a bowl.
Let the mixture stand for 3 to 5 minutes. Meanwhile, cut the other pie crust into 1/2 inch strips to make a lattice top. Pour the cherry mixture into the pie shell. Lay the strips across the pie in
a lattice pattern, and pinch the edges to seal.
3. Bake in the preheated oven 40 to 50 minutes until the fresh cherry pie crust is golden brown. Allow to cool before serving. The fresh cherry pie recipe is ready....enjoy the pie !

INGREDIENTS

* 1 (20 ounce) can pitted sour cherries
* 1/4 cup white sugar
* 1 envelope (1 tablespoon) unflavored gelatin
* 2 egg yolks
* 1/8 teaspoon salt
* 1/4 teaspoon almond extract
* 1/4 teaspoon red food coloring
* 2 egg whites
* 1/4 cup white sugar
* 1 cup heavy cream, whipped
* 1 (9 inch) graham cracker crust

DIRECTIONS

1. Let cherries sit in juice with 1/4 cup sugar for 2 hours.
2. Drain juice off cherries into a saucepan. Soften gelatin in the cherry juice. Mix in egg yolks and salt. Cook on low heat, stirring constantly, for 4 minutes, until gelatin dissolves. Remove from heat and stir in almond extract, red food color, and cherries.
Chill until thick, but not coagulated.
3. In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until stiff peaks form. Fold into cherry mixture. Fold in whipped cream until no streaks remain. Pour into graham cracker crust. Chill in refrigerator. The fresh cherry pie recipe is ready...enjoy the pie !!
